Grilled Chicken and Vegetable Skewers:
Section 1: List Your Ingredients
1 lb boneless, skinless chicken breasts, cut into cubes
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 zucchini, sliced
1/4 cup olive oil
2 tbsp balsamic vinegar
2 cloves garlic, minced
Salt and pepper to taste
Section 2: Spicy Tuna Bowl
1 cup cooked brown rice
1 can tuna, drained
1/2 avocado, sliced
1/4 cup sliced cucumber
1/4 cup shredded carrots
1/4 cup edamame
1 tsp Sriracha sauce
1 tbsp soy sauce
Section 3: Quinoa and Black Bean Salad
1 cup cooked quinoa
1 can black beans, drained and rinsed
1/2 red onion, diced
1 red bell pepper, diced
1 jalapeno pepper, seeded and diced
1/4 cup chopped cilantro
Juice of 1 lime
1 tbsp olive oil
Salt and pepper to taste
Directions:
Grilled Chicken and Vegetable Skewers:
Soak wooden skewers in water for 30 minutes.
Thread chicken, bell peppers, and zucchini onto skewers.
In a small bowl, whisk together olive oil, balsamic vinegar, garlic, salt, and pepper.
Brush mixture onto skewers.
Grill skewers over medium-high heat for 8-10 minutes, turning occasionally, until chicken is cooked through.
Spicy Tuna Bowl:
In a bowl, mix together tuna, Sriracha sauce, and soy sauce.
Divide cooked rice into two bowls.
Top rice with tuna mixture, avocado, cucumber, shredded carrots, and edamame.
Quinoa and Black Bean Salad:
In a large bowl, mix together quinoa, black beans, red onion, red bell pepper, jalapeno pepper, and cilantro.
In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
Pour mixture over salad and toss to combine.
